Healthy Vegetable Fried Rice Salad


I am a texture person. I love every meal to have a mix of crunchy and smooth foods. My new favorite Asian inspired dish is a quick and easy vegetable fried rice over a kale salad.


Healthy vegetable fried rice:


  • frozen vegetable blend
  • pre-cooked brown rice
  • one egg
  • olive oil
  • coconut aminos or soy sauce
  • salt
  • pepper
  • garlic
  • ginger


  • your favorite lettuce blend (I prefer a relatively inexpensive kale, carrot, cabbage blend I found at whole foods)
  • coconut aminos or soy sauce
  • Peanut-Asian salad dressing (My favorite is the thai peanut coconut sauce from whole foods)
  1. toss your frozen veggies in a pan on medium-high heat with a dash of olive oil.
  2. add salt, pepper, a splash of coconut aminos, a pinch of garlic, and a pinch of ginger
  3. allow the vegetables to heat up before adding an egg
  4. 20-30 seconds after adding the egg begin to stir it with a rubber spatula until small pieces of egg are throughout.
  5. add pre-cooked brown rice to the pan and stir (see my post below on easy, foolproof instant pot brown rice)
  6. add more coconut aminos to personal flavor preference and allow to heat
  7. remove from heat and let rest
  8. take your favorite crunchy lettuce mixure, I used a kale, carrot, cabbage blend, and add coconut aminos and peanut salad dressing. Mix to incorporate.
  9. Top with fried rice mixture and enjoy a healthy and easy asian inspired dish!
